Oatmeal Blueberry Bread

Preheat oven to 350˚

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon salt
  • ¼ cup shortening
  • 6 tablespoons firmly packed brown sugar
  • 1 egg, beaten
  • 1 cup rolled oats
  • 1¼ cups reduced fat buttermilk
  • 1 cup dried blueberries (cranberries, raisins or nuts)

Mix flour, baking powder, baking soda and salt in a ceramic bowl. Cream shortening and brown sugar in a separate bowl with a spoon until light; add beaten egg and oatmeal and stir.

Add oatmeal mixture to flour mixture; blend in buttermilk and dried blueberries.

Pour batter into a greased 9 inch loaf pan; bake at 350˚ for approximately 55 minutes, or until done. Remove from pan and cool on a wire rack.

This recipe makes one loaf of bread.
