Irish Soda Bread

  • 4 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cups buttermilk

Preheat oven to 450˚F. Measure dry ingredients into ceramic bowl. Mix them by hand to aerate; add buttermilk and knead into a soft ball. Don’t over knead the dough or it will become tough.

Use a little extra flour to form the dough into a ball about 3 inches high; place it on a lightly floured baking sheet. Using a sharp knife cut a cross into the top.

Place the baking sheet close to the top of the oven and bake for 35 to 45 minutes. Wrap bread in a clean dish clothe after baking to keep the crust from becoming too hard.
