Coconut Snowballs

  • 5 cups shredded coconut
  • 14 ounces sweetened condensed milk
  • 1/3 cup corn syrup
  • 1 tablespoon vanilla
  • 1 pound confectioners sugar

Combine 3 cups shredded coconut with other ingredients. Shape into 1-inch balls and roll in remaining 2 cups shredded coconut.

*For any holiday you could place 2 cups of shredded coconut in a plastic bag and add food coloring to tint the coconut prior to rolling and make these candies more festive (i.e. red or blue food coloring for the Fourth of July, red or green food coloring for Christmas, etc.) Another option is to toast the 2 cups of shredded coconut in the oven at 350 degrees Fahrenheit for 6-10 minutes – keep a close watch, coconut burns very easily. Allow the coconut to cool completely prior to rolling.
