Banana Bran Bread

  • 1½ cups sifted all purpose flour (sift before measuring)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup butter, softened
  • ½ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 fully ripe bananas
  • 1 cup whole bran cereal
  • ½ cup chopped walnuts

Preheat oven to 350 degrees Fahrenheit. Grease a 9x5 loaf pan; set aside. Sift together flour, baking powder, baking soda and salt; set aside.

In a large mixing bowl, beat butter, sugar, egg and 1 teaspoon vanilla extract until light and fluffy and all the ingredients are thoroughly combined; set aside.

Peel bananas; place in a medium-sized bowl and mash with fork or potato masher until all large lumps are broken up. Add to the sugar mixture and stir with a wooden spoon until well mixed. Add flour mixture, bran cereal and nuts, beating until smooth.

Turn batter into prepared loaf pan, spreading to make smooth. Place pan on center rack in oven and bake for 60 minutes or until toothpick inserted into the center comes out clean. When bread is done, place pan on a wire rack and let cool for about 10 minutes. Remove bread from pan; transfer bread to a wire rack and let stand until it is completely cool.

May be sliced and served with butter or cream cheese, refrigerate until ready to serve.

Additional suggestion: If allergic to nuts, you may substitute fresh blueberries for a Blueberry Banana Bran Bread.
