Applesauce Cake

  • 1 ¾ cups all purpose flour
  • 1 ¼ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon cloves
  • 1 cup sweetened applesauce
  • ½ cup vegetable or canola oil (I prefer extra light virgin olive oil)
  • 1 egg
  • ½ cup nuts (optional)

Spray the bottom of a 9 inch loaf pan with non-stick cooking spray. Combine flour, sugar, baking soda, salt, cinnamon and cloves in a large mixing bowl. Add applesauce and oil. Blend well with mixer at low speed. Add egg; continue to blend approximately 2 minutes at low speed. Stir in nuts; pour batter into loaf pan.

Bake at 350˚F for 45 to 50 minutes.
